For best results, make the ice cream balls the day before you are ready to serve them.
Ingredients
- 1 pint French vanilla ice cream
- 1/3 cup finely chopped almonds
- 2/3 cup dried pound cake crumbs
- 1 egg
- 1 t. sugar
- 1/4 t. almond extract
Method
Line a pie plate with plastic wrap and place in freezer. Using a scoop, make 4 ice cream balls and place on pie plate in freezer. Combine almonds and cake crumbs; slightly beat egg with sugar and almond extract.
One at a time, roll balls in crumb mixture and put back in freezer. Again remove one at a time and dip in egg mixture, then crumb mixture and place back in freezer covered loosely with plastic wrap, over night.
Heat oil to 375 degrees. Fry one at a time for 30-40 seconds. Drain on paper towels. Serve in bowls alone or with your favorite ice cream sauce.
