Pasta with Vegetables and Cheese

Makes my son happy.

My son makes no fuss to eat this. Even my husband likes this. So, this used to be a quick breakfast at least once in a week.

Ingredients

1.       Pasta – 200 gms

2.       Carrot – 1

3.       Beans – 4 or 5

4.       Peas – a handful

5.       Mushroom – 4 or 5

6.       Capsicum – Red or green – 1

7.       Cabbage – half cup – shredded

8.       Cheese – 50 gms

9.       Onion – 1

10.   Garlic pods – 2

11.   Tomato – 1

12.   Tomato sauce – 2 tsp

13.   Butter – Little

14.   Salt

Method

1.      Boil Pasta in water for 10 – 15 minutes (or as mentioned in the pack), adding salt (salt should be little more than usual). Drain the excess water. Wash the pasta with cold water and keep aside.

2.       Cut all vegetables lengthwise.

3.       Heat a pan. Add butter to it and fry onion and garlic pods first.

4.       Once when onion turns brown, add rest of vegetables, except tomato and fry for 5 minutes.

5.       Add tomato now and fry till it gets smashed.

6.       Add cheese (shredded) and mix till it gets melted completely.

7.       Add tomato sauce and mix well.

8.       Add the cooked pasta now and mix well. Cook for 1 minute in medium flame.

9.       Switch off and serve hot.

Tips:

You can add powdered pepper or green chili for more taste. I avoid this, as my son does not like that.
