This spicy recipe is very common in India and must have been invented in the Kerala province. The availability of pearlspot (Etroplus suratensis) in the backwaters in large numbers is the reason behind this. This dish is a high price item on the menu of large hotels.

Here I am trying to explain the method of cooking this fish with a blend of both Kerala and Tamil Nadu styles.

Chilly Powder |
1 tbs |

Grated Coconut |
½ Cup |

Black Pepper |
½ tbs |

Turmeric Powder |
½ tbs |
|
Coriander Powder |
2 tbs |
|
Green chillies fresh |
2 nos |
|
Ginger Paste |
1 tbs |
|
Garlic Paste |
1 tbs |
|
Vinegar |
2 tbs |
|
Salt |
To taste |
Method
Clean the fish to remove the scales and make diagonal slits on both sides. The tail fin can be left, as it can be used to hold while eating.
In a pan, fry together the chilly powder, coconut, black pepper, turmeric powder and coriander powder till they are well roasted. Avoid over roasting and do not add oil or water during this process. This is called the masala and it is pale brown in colour. Let the masala to cool down and blend the masala with ginger, green chillies, and garlic with little bit of water and vinegar. Add salt according to taste. It blends well to give a fine paste.
Apply this paste on both the sides of the prepared fish. Wrap the fish coated with masala in a banana leaf. Heat some oil in a pan and place the fish along with the banana leaf. Both sides have to be fried well.
Garnish the fish fry according to your taste. Onion, lemon slices, cucumber and curry leaves can match better. This can form an excellent combo for rice, roti, or even with the bread. It can also be had along with some good onion raitha
