Mexican Lasagna and Helpful Measurements
This is my delicious recipe for Mexican Lasagna. I believe it is unusual and it is very good. I want to share it with you and I hope your family enjoys it as much as mine does. I am also adding some measurements for canned foods and for raw foods. I often find it hard to get a can the size that is equal to what is called for in my recipe. This list is helpful to me and I hope to you also.
How many of you love Mexican food? I’m sure there are lots of hands raised. I have a Mexican Lasagna recipe that I love to make and I love eating this delicious Lasagna even more. I am sharing it with you and I hope you like it as much as I do. After the recipe, I am also adding the general rule of how much food, as in cups, cans contain and how many cups some raw food measures after cooking.
Mexican Lasagna
Ingredients:
2 tsp. olive oil
1 1/2 chopped onion
1 lb.zucchini, diced
2 1/2 tsp ground cumin
1 can (14.5 oz,) diced tomato with chilies
1 can (15 oz.) black beans, rinsed
1 can (11 oz.) corn niblets, drained
1 can (10 oz.)mild enchilada sauce
1/2 cup chopped cilantro
5 (8 in.) whole wheat tortilla’s
1 1/4 cups shredded Cheddar cheese
Garnish with sour-cream.
Heat oven to 400. Coat 3 qt.round baking dish with nonstick spray.
1.Heat oil in large non-stick pan over med. heat. Add onion and saute 5 min.
2.Add zucchini and cumin, saute 5 min.or until tender crisp. Stir in tomatoes, beans, corn and enchilada sauce. Bring to simmer. Remove from heat and stir in cilantro.
3. Put 1 tortilla in baking dish. Top with 1 1/2 zucchini mixture. Sprinkle with 1/4 cup cup cheese. Repeat layers 4 times.
4.Cover and bake 20 to 35 min. until bubbly around edges and cheese is melted. Cool 5 min. Cut into wedges and serve. Garnish with sour cream if you wish.
Here are the can measurements I told you about at the top of the article.The general rule is, as the cook, when you need a certain size can for your recipe you can’t find it. Here are some guidelines that shows you how much a particular can contains. I hope it’s helpful.
* Ordinary small tuna or minced clam can (6 1/2 to 7 ounces) just under 1 cup
* Ordinary soup can size (10 1/2 to 12 ounces) = 1 1/4 cup
* Slightly larger size = 1 pound, known as # 303= about 2 cups
* Larger still = (20 ounces) known as # 2 size= 2 1/2 cups
* Larger still (29 ounces) known as #2 1/2 =3 1/2 cups
Raw Foods equal how much cooked:
* 1 cup raw rice = 3 1/2 cups cooked
* 1 cup raw wild rice = 3 1/2 to 4 cups cooked
* Macaroni doubles itself
* Noodles grow a third
* 1 1/4 pounds unshelled walnuts = 2 cups chopped walnuts
* 2 cups grated cheese firmly packed = 1/2 pound
* 1 cup (1/2 pint) whipping cream =2 1/2 cup whipped
