A Vitamin-Rich Spaghetti with Carrots That Kids Will Surely Love
Keep your kids healthy; always include fresh vegetables in their daily food intake.
Spaghetti has always been kids’ favorite food most especially during special occasions such as Christmas, New Year, birthdays, fiestas and the likes or even during ordinary days only. There are several ways or style in cooking spaghetti but most of these recipes are lacking in vegetables which is very essential in the health of a growing child.
Most kids don’t like eating vegetables, oftentimes, if you give them foods with vegetables they just simply disregard, ignore or put it aside while others will secretly or (worst) rudely throw it away.
To ensure that your kids will gain necessary vitamins and will not do the above-mentioned things, here’s one spaghetti recipe that is vitamin-rich and your kids will surely like it. I called it – Vitamin-rich Spaghetti with Carrots.
Here are the ingredients and the procedure:
Ingredients
- ½ kg spaghetti
- ¼ kg ground beef
- ¼ kg ground pork
- ¼ kg hotdogs, chopped
- vegetable cooking oil
- ¾ kg catsup
- 1 180 g cheese, ½ cubed and ½ grated
- 1 cup sugar
- 1 370 ml can evaporated milk
- 2 medium sized cloves garlic. finely chopped
- 2 medium sized onions, finely chopped
- 3 medium-sized carrots, peeled and diced
- salt to taste
Note: If your kids don’t like the taste of fresh onion and garlic you can use powdered ones for replacement.
Procedures
Sauce preparation
- Sauté garlic and onion
- Add the ground pork and beef, cook until all water evaporates and the meat is lightly brown
- Add chopped hotdogs and salt to taste (add msg if you wish)
- Pour catsup, cover and bring to a simmer for 5 minutes stirring occasionally
- Add sugar, cubed cheese and diced carrots, boil for 2 minutes and pour evaporated milk
Pasta preparation
- While cooking the sauce, bring to boil 1 l of water in a pot and upon boiling add a pinch of salt and a few drops of cooking oil to maintain its texture and to prevent the pasta from sticking together
- Slowly dip ends of spaghetti into boiling water pushing it down as it cooks
- Boil uncovered, lifting occasionally to prevent them from sticking on the bottom of the pot
- Avoid overcooking, 10-12 minutes is more likely the ideal time
- Turn into strainer; drain well
It’s done. Serve with sauce and cheese.

Carrots are rich in Beta carotene which is metabolized into vitamin A. Carrots are also rich in dietary fiber, antioxidants, and minerals. Lack of Vitamin A can cause poor vision, including night vision, and vision can be restored by adding Vitamin A back into the diet.
