Caprese Kebabs

Very few foods can beat the flavor combination of tomato, mozzarella, basil, and olive oil. Usually presented as a salad, this recipe calls for kebabs.

This is a great recipe for entertaining, it’s a dual layered appetizer that has a top layer of Caprese Kebabs, and a bottom layer of Toasted French Bread with Olives and Tomatoes, which will absorb some of the Caprese oil.  It’s light and health with a low amount of salt and saturated fats.

Ingredients:

  • 1 Pack Grape Tomatoes
  • About 1 Cup Fresh Basil
  • 1lb Mozzarella (I like the ones that are tube shaped) cup into 1/4 inch slices, then cubed
  • 1 Tbsp Olive Oil
  • 1 Tsp Salt & Pepper
  • 1 Package of Large size toothpicks or small wooden skewers
  • 1 Loaf French Bread
  • 1 Small Can Black Olives (Drained/Rinsed)
  • 1 Large Roma Tomato – Cut in half, deseed it with your finger, and dice into tiny cubes

Recipe:

  • Rinse and dry your tomatoes and basil
  • Cut each Basil Leaf in 1/2 Width Wise (This can be done quickly by stacking the leaves)
  • In a small bowl combine the tomatoes, basil, and cheese
  • Add olive Oil, then Salt & Pepper, Fold gently with your hands!
  • Grab your little skewers and put on a cube of cheese, a basil leaf, and a tomato
  • Slice your French bread into 1/4 inch slices, toast til golden brown
  • Cover the entire bottom of a plate with the bread, arranged in a spiral fashion
  • On top of the bread add the Olives, and diced tomatoes
  • Arrange your Caprese Kebabs in a spiral fashion on top of the bread slices
  • Roughly Chop some of the remaining Basil and sprinkle it over the whole plate
  • ***Optional*** You can cut the Grape Tomatoes in Half, and make it a little sandwich on the skewer with a top and bottom if you want, just be careful it will get messy
  • ***Optional*** Add the remaining Cheese and Tomatoes to the french bread after the kebabs are gone and enjoy a little bruschetta :D

I hope you like this, you could spice it up and make a basil pesto that you toss the Caprese ingredients in before you serve, but that’s another recipe.
