Sweet and Sour Mango Curry! a Mouthwatering Indian Vegetarian Recipe!

Cook and Prepare the Mouthwatering Mango Curry in less than an hour!
Gives you a sweet, sour and tangy flavor!
Eat with bread or steamed rice.

Benefits of eating Mango :

·         high content of antioxidants like  betacarotene, quercetin and astragalin

·         helps to reduce the risk of high blood pressure as mangoes are rich in potassium

·         contains vitamin K, phosphorus and magnesium

·         lowers blood cholesterol levels as mangoes contain pectin, a soluble dietary fibre,

·         great source of vitamin E

Ingredients

·         2 half ripe mangoes (diced)

·         2 big potato (diced)

·         1 big tomato (diced)

·         ½ big onions (chopped finely)

·         3 pods garlic (crushed)

·         1 stalk curry leave  (optional)

·         ½ tsp cumin seeds

·         ½ tsp mustard seeds

·         3 tbsp of fish curry power

·         1 tbsp chilli powder

·         2 tbsp of oil

·         3 tbsp of tamarind extract (assam)

·         ½ tsp sugar

 

Method

1.       ½ cook the potatoes in microwave for 10 minutes

2.       In a deep pan, heat oil

3.       Add the cumin seeds, mustard seeds, onions, garlic  and curry leaves and fry for 2 utestes

4.       Add tomato and potato, fry for another 2 min

5.       Add mango and stir in for 1 min

6.       Add the tamarind extract and 3 cups of water . Allow to simmer for 5 minutes under medium heat.

7.       Add the fish curry powder, chilli powder and sugar. Allow to simmer for 5 minutes under high heat.

8.       Add salt and allow to simmer until oil surfaces.

9.       Remove from heat and serve with steam rice
