    This sounds tasty Emmie!
I do my own salads especially on a Friday when I have a baked potato, with strong cheddar melted on top.
Mine is: mixed chopped peppers, fine chopped lettuce (Middle)
plum tomatoes, sliced cucumber, chopped button mushroom (Raw) spiced green and black olives, rocket. ( will try adding the mint next time) topped with olive oil,

I look forward to reading your next recipe.
