Patriotic Potato Salads

Fun for any holiday, turn boring potato salad into something fun and creative.

I came upon creating these recipes purely by accident. Having grown different colored potatoes for some years, it occurred to me the brilliance of combining them in a colorful array to suit any occasion. I have given several potato salads which you can vary according to taste and country. Please make sure you keep the salads refrigerated until serving time and do not re-serve any potato salad that has been left out in the sun.

Please note with some potatoes the skin is colored but the flesh inside, is not, it is important to select varieties of potatoes that are colored all the way through.

4th of July Potato Salad

Ingredients

  • 1 1/3 cup Diced cooked White Potatoes
  • 1 1/3 cup Diced cooked Red fleshed Potatoes (eg. All Red)
  • 1 1/3 cup Diced cooked Blue fleshed Potatoes (eg. Russian Blue)
  • ¼ cup sliced red radishes
  • 1/2 cup sliced celery
  • ½ cup sliced onions or scallions
  • 2 tablespoons of parsley (cut up)
  • 1 cup mayonnaise
  • 1 tablespoon vinegar
  • 2 teaspoons prepared mustard
  • 1 teaspoon celery seeds
  • salt and pepper to taste

Directions

Combine the ingredients and refrigerate.

Variations of this salad also work for British, Australian, French and Russian (among other) Patriotic holidays.

Canada Day Potato Salad

Ingredients

  • 3 cups Diced cooked White Potatoes
  • 1 cups Diced cooked Red fleshed Potatoes (eg. All Red)
  • ¼ cup sliced red radishes
  • ¼ cup diced sweet red peppers
  • ½ cup sliced red onions
  • 2 tablespoons of parsley (cut up)
  • 1 cup mayonnaise
  • 1 tablespoon vinegar
  • 2 teaspoons prepared mustard
  • 1 teaspoon celery seeds
  • salt and pepper to taste

Directions

Combine the ingredients and refrigerate.

Variations of this salad also work for Japanese and Indonesian (among other) Patriotic holidays.

Cinco de Mayo Potato Salad

Ingredients

 

  • 3 cups Diced cooked White Potatoes
  • 1 cups Diced cooked Red fleshed Potatoes (eg. All Red)
  • 1 cup diced celery
  • ¼ cup sliced red radishes
  • ½ cup sweet green peppers
  • ¼ cup sweet red peppers
  • ½ cup sliced red onions or spring onions
  • 2 tablespoons of parsley (cut up)
  • 1 cup mayonnaise
  • 1 tablespoon vinegar
  • 2 teaspoons prepared mustard
  • 1 teaspoon celery seeds
  • salt and pepper to taste

Directions

Combine Ingredients and refrigerate.

This may be used for Italian (among other) Patriotic Holidays.

    I love ethnic cuisine. I realize here in the States when I eat at a chinese restaraunt the menu is for American tastes. I want to eat like the natives. Your blog posts are authentic from Cinco de Mayo to Canada Day. Cheers
