Types of Salads and Tips on How to Serve Them

Salads add variety and color to the meal. For the chef, the salad allows him or her to display an artistic expression of creativity.

A salad is any cold dish of meat, poultry, seafood, fruit, vegetables, or dairy products served or in combination, with or without some type of dressing.  In a restaurant setting, salads are usually prepared in a department of the kitchen sometimes called the “salad pantry,” where they are plated, ready for service.  They are then refrigerated until needed.

Salads add variety and color to the meal.  For the chef, the salad allows him or her to display an artistic expression of creativity.  Generally, salads are low-calorie dishes, if dressings are chosen well.  For this reason, the salad became the favorite of the weight watchers.  From a very humble farming crop, the salad has been elevated to a fashionable status food.  Because of this, it is a profitable addition to a restaurant’s menu.

Four Types of Salads Commonly Served

Appetizers

These include shrimp, lobster, and crabmeat cocktails; fruit; pickled herring and chopped chicken liver.  Such salads should be light so as to stimulate rather than to satisfy the appetite.

Accompaniments

These include mixed greens or chef’s salads, hearts of lettuce, pear and cottage cheese, or pickled beets.  These are served as side dishes with the dinner, in moderate portions.  Such salads should contrast with the accompanying food and preferably not to be sweet as to jade the appetite.

Main Course Salads

These constitute the whole meal, such as various combination meat, poultry, sea food, fruits, vegetables, dairy, gelatin, or macaroni products.  Examples are chicken salad with celery and pineapple; fruit salad tomato stuffed with tuna salad; and stuffed green peppers.

Dessert Salads

These include various flavored molded gelatins, aspics, and mousses.  They are often sweet in flavor and composed of fruits, nuts, dairy products, and gelatins.

Salads should be kept chilled until ready to serve.  Dressings should not be added until just before serving; or else, the salad may become limp.
