Chicken and Dumplings Served with Homemade Crackers

Chicken and Dumplings is my quintessential comfort food. Anytime I am down in the dumps…I turn to dumplings.

Ingredients:
2- 2 ½ lbs of chicken breast with skin on
3 ribs of chopped celery
1 large chopped onion
1 tbsp of chopped parsley
2 bay leaves
2 cloves of  garlic, minced
1 tsp salt
1 tsp pepper
1 cup of heavy whipping cream
1 cup of whole milk

Dumplings Ingredients:

    * 2 cups all-purpose flour
    * 1 teaspoon salt
    * ¾ cup of ice cold water

Method:

1. Place first eight ingredients in a large heavy stock pot or Dutch oven.
2. Fill pot with 4 quarts of water.
3. Cook over medium heat until chicken is tender (about an hour depending on the size of the chicken breasts.)
4. Remove the chicken and bay leaves from the pot. Set the liquid aside and discard the bay leaves.
5. When you can handle chicken, remove skin and pull chicken meat off in bite size chunks. Set chicken aside.
6.   Add the milk and heavy cream to the reserved liquid, and set aside.
7. In a mixing bowl, combine flour and salt, making a well in the center.
8. Slowly add ice cold water into the well.
9. Use your fingers to gradually incorporate the water with the four mixture.
10. Knead the dough and form into a ball.
11. Dust your work surface with flour.
12. Roll the firm dough onto the floured work surface until it is about 1/8 inch thick.
13 Allow the dough to rest for 10 minutes.
14 Bring chicken stock and milk mixture to a simmer.
15. Cut the dough into 1 inch dumpling pieces.
16. Drop the dumplings into the pot one at a time, you may still need to stir to separate. 
17. Cook the dumplings until they float, about 5 minutes.
18. Add chicken back to pot.
19. Simmer for 5 additional minutes.
20. Serve!

I really like to make my own “crackers” to serve along side my Chicken and Dumplings. Just make an extra batch of the dough, just as described above. Instead of rolling the dough out to 1 inch, roll it out as thin as possible.  Cut the dough into long and narrow strips. Sprinkle with sea salt and cracked black pepper. Spray baking pan with cooking spray. Spread the strips out on the pan. Bake on broil until dough becomes brown and flaky. Turn to the opposite side to bake until it too is golden brown and flaky. Serve them along side the Chicken and Dumplings.

    This has been something my mother made often and a childhood favorite.Still makes them on occasion when I need a comfort food.
    The crackers I did not know about but will defiantly try when I make this again.

    Chicken and dumplings. You must be a southern gal. My girlfriend stole my heart when she invited me over for dinner and made chicken and dumplings. They were almost as good as grandmas.

    Sounds great. And yummy. I just ate breakfast and when I looked at the picture in your recipe, it made me hungry all over again. Now I have to go beg my husband for some more poached eggs.
