Easy Indian Food

The food of India is as vast as the Country itself and in what I am writting provide you with an interesting cross-section of recipes that includes both well known foods.


2 teaspoons vegetable oil, 1 large (200g) onion chopped, 4 cardamon pods bruised, 2 teaspoons grounded coriander, 1 teaspoon of garan masala, 1/2 teaspoon of chilli powder, 6 curry leaves, 2 large (360g) carrots chopped, 2 large (600g) potatoes choppped, 100g button mushrooms chopped, 1 litre (4 cups) of vegetable stock, 425g can tomato puree, 2 tablespoons lemon juice, 1/2 cup (125ml) coconut milk, 1/2 cup (60g) frozen peas, 2 tablespoons chopped fresh coriander leaves.

1. Heat oil in large pan cook onion and cardamon stirring until onion is browned lightly.

2. Add grounded spices,curry leaves, carrots, potatoes,mushrooms, stock and puree: boil then immediately simmer uncovered about 15 minutes or until vegetables are tender.

3. Add juice and milk then simmer uncovered for 10 minutes add peas simmer uncovered for 3minutes or until peas are tender just before serving stir in fresh coriander leaves.

This should serve 6-8 people, and can be made a day ahead.
