Hot and Sour Tamarind Soup (Rasam) : a 15 Minutes Recipe

Hot and Sour Tamarind Soup is very easy to prepare and fast to cook. This quick and easy recipe is also higly nutritious.

Ingredients
- 3 tbsp of Tamarind Concentrate
- 4 cups water
- 3 dried chillies (halved)
- 4 pieces of garlic crushed
- 1 large tomato ( diced )
- 2 tsp black peppercorns
- 1/4 tsp cumin
- 1/4 tsp fennel
- 1 stalk curry leaves
- 3 shallots ( chopped finely)
- 1/4 chilli powder
- 1/4 turmeric
- 1 stalk of cilantro ( chopped finely)
- salt as required

Method
- Pound the peppercorns, cumin, fennel in a pounder or grind in food processor.
- Pour the 4 cups of water in a pot
- Mix the tamarind concentrate into water to make a tamarind solution
- Squeeze the tomatoes into the solution and add the crushed garlic too
- Add the pounded ingredients into the solution and place over medium heat
- In another small pan, heat oil fry the onion, dried chilli curry leave over low heat.
- Off the flame, add the chilli powder and turmeric. Stir well.
- Add the fried mixture into the tamarind solution.
- Add salt as required
- Remove the soup from flame, after 1 boil , garnish with chopped cilantro.
- Hot and Sour Tamarind Soup can be serve hot with steamed rice.
