How to Make Your Own Yoghurt
Yogurt is a favourite dairy product ideal for breakfast, lunch, or snack food any time of the day. Yogurt is made by the natural bacterial fermentation of milk. The process involves culturing cream or milk with live and active bacterial cultures. Bacteria is directly added to the milk.

To make your own yogurt, you will need 4 cups of skimmed milk and 2 tablespoons yogurt culture that can be bought at a health food shop. If this is not available you can use 2 tablespoons plain or natural yogurt bought at a shop.
1. In a heavy saucepan, warm the milk over low heat until it reaches a temperature of 85⁰ C (185⁰ F). (Use a sugar thermometer.) Remove the saucepan from the heat and allow the milk to cool to 37⁰ C (98.5⁰ F). Add the yogurt or the yogurt culture and stir until thoroughly mixed.
2. Pour the mixture into a one litre jar. Cover with plastic wrap; allow the yogurt to incubate undisturbed in a warm place (40⁰ C – 44⁰ C [104⁰ F - 111⁰ F]) for 3 to 4 hours or for 7 to 8 hours if using the yogurt culture. For incubation you can cover the yogurt with a blanket or use a picnic cooler box filled with crumpled newspapers.
3. As soon as the yogurt retains the impression of a spoon pressed into the surface, it is finished with incubation. The next step is to refrigerate the yogurt for about 3 hours to allow the yogurt to set more.
Remember, the longer the yogurt incubates, the sour it will be.
Your yogurt is now ready to enjoy; either plain or you can add some real fruit pieces.
