Chicken with creamed coconut.Chillies.
1 No. 11 chicken, 150g Bamboo shoots, 80g creamed coconut, 20g sugar, 1 lemon grass stalk bruised, salt, 120ml oil.
REMPAH.
250g Onions, 4 Garlic cloves, 6 Buah keras/candlenut, 10g ground coriander, 5g ground laos, 2.5 ground white pepper, 5g Blacan/terasi, 4 Red chillies, large and fresh.
1. Cut chicken into serving pieces.
2. Cut bamboo shoots into thin slices.
3. pound or blend rempah into fine paste.
4. Dissolve creamed coconut in 400ml of hot water.
5 Heat oil in casserole and fry rempah until the oil separates. Add 200ml coconut milk and fry for 10 – 15 minutes. Add chicken pieces and continue frying for 10 -15 minutes. Add bamboo shoots,sugar,salt and remaining coconut milk . Cook until tender and gravy reaches correct consistency.
