Spinach, Lentils, Tomato and Mint.

Spinach Raita.

1 bunch (500g) English Spinach, 1 Tablespoon of Ghee, 1 Small (80g) Onion finely chopped, 1/2 teaspoon black mustard seeds, 1 teaspoon cumin seeds, 1 teaspon of ground cumin, 1/4 teaspoon of chilli powder, 2 teaspoon of lemon juice, 1 teaspoon of salt, 2 teaspoons chopped fresh mint leaves, 1 1/3 cups (300ml) of yogurt.

Boil ,steam or microwave spinach until just wilted then drain. Cool and squeeze excess liquid from spinach: shred spinach. Heat Ghee in small pan cook onion stirring until onion is browned lightly. Add seeds cook stirring until seeds pop. Add remaining spices cook stirring until fragrant. Add juice remove from heat then cool. Combine salt, mint and yogurt in medium bowl mix in spinach and onion mixture. this should make about 2 cups. Can be made 3 hours ahead. To store covered in refrigerator and is not suitable for the freezer. Spinach can be microwaved.

Lentil with Garlic Dressing.

2 cups (400g) masoor Dhal (red lentils) , Rinsed and drained., 1/2 teaspoon of ground ginger, 1 teaspoon ground coriander, 1/2 teaspoon sweet paprika, 3 1/2 cups (875ml) chicken stock, 4 tablespoons of ghee, 2 teaspoons cumin seeds, 2 medium (300g) onions sliced, 8 cloves garlic finely sliced, 2cm piece ginger sliced, 1 long fresh green chilli finely sliced, 2 tablespoons shredded fresh mint leaves.

Combine dhal ground spices and stock in medium pan simmer uncovered stirring occasionally for about 30 minutes or until dhal is tender and mixture has thickened. Heat ghee in medium pan cook cumin seeds,onions garlic, ginger and chili stirring occasionally or until onions are browned ,stir mint leaves and half the onion mixture into lentils. Top with remaining onion mixture.

This should make about 4 1/2 cups can be best made just before serving. It is not suitable for the freezer and not suitable for the microwave.

Tomato and Mint Kachumber.

4 medium (760g) Tomatoes, 1 medium (150g) onion sliced, 1/4 cup shredded fresh mint leaves, 1/4 cup (60ml) lemon juice, 2 teaspoon of sugar,1 teaspoon salt.

Peel and quarter tomatoes discard seeds then cut tomato into thin slices combine tomatoes onion and leaves in large bowl. Whisk juice sugar and salt together in small bowl, then mix into tomato mixture cover in refrigerator for at least 30 minutes. This should serve 4 -6 people. Best made on the day of serving. Not suitable for the freezer and not suitable for cooking in the microwave.
