Sambal Serai( Sambal Lemon Grass.)

Prawns with Lemon grass.

500g Uncooked prawn meat, 4 Lemon grass stalks fresh, 60g creamed coconut,2 red chillies fresh, 2 green chillies, 80ml oil, 80g onions sliced.

REMPAH.

5 Buah keras/candlenut, 5g Blacan, 2.5g Ground laos, 3 Red chillies large.

1. De-vein the prawns,wash and dry thoroughly.

2. Remove hard outer layers,and slice lemon grass finely using about 25mm from the root.

3. seed the chillies and cut into diagonal pieces.

4. Pound or blend rempah into fine paste.

5. Heat oil in a casserole and fry onions until fragrant and soft. Add rempah and lemon grass ,fry until the oil separates. Add prawns,salt and coconut milk, bring to the boil and allow it to cook for 5 minutes. Add chillies just before serving. Garnish on top with garlic and onion flakes.

This should serve 4 people. I hope you all like this meal.
